Fudgy Chocolate Layer Cake
Moist, deeply chocolatey layers with silky chocolate buttercream. The celebration cake everyone asks for.
Crisp edges, gooey centers and toffee notes from browned butter. The chocolate chip cookie, perfected.
Browning the butter adds nutty, caramel depth, extra brown sugar keeps the centers chewy, and a short chill in the fridge gives you thick cookies with crinkly tops. Pools of melted chocolate and a sprinkle of sea salt seal the deal.
Brown the butterMelt the butter in a light-colored pan over medium heat, swirling, until it foams and smells nutty with golden-brown specks, 5–7 minutes. Pour into a bowl and cool 10 minutes.
Mix the sugarsWhisk both sugars into the butter, then add the egg, yolk and vanilla and whisk for 1 minute until glossy.
Add dry ingredientsFold in the flour, baking soda and salt until just combined, then fold in the chocolate.
ChillCover and refrigerate the dough 30 minutes (or up to 3 days for deeper flavor).
BakeHeat the oven to 180°C (350°F). Scoop 2-tablespoon balls onto lined trays, 5 cm apart. Bake 10–12 minutes until the edges are golden but centers look underdone.
FinishSprinkle with flaky salt and cool on the tray for 5 minutes before moving to a rack.
Keep in an airtight tin for up to 5 days. Add a slice of bread to keep them soft.
