About this recipe

Rich, custardy in the middle and caramelized at the edges, this is French toast at its finest. Slightly stale brioche soaks up the custard without falling apart, and a touch of cinnamon and orange zest makes it smell irresistible.

Method

  1. Make the custardWhisk the eggs, milk, cream, sugar, vanilla, cinnamon, orange zest and salt in a shallow dish until completely smooth.

  2. SoakDip each slice of brioche in the custard for about 15 seconds per side, letting excess drip off.

  3. FryMelt a little butter in a large skillet over medium-low heat. Cook the slices 2–3 minutes per side until deep golden and set in the center.

  4. Keep warmTransfer to a rack in a 90°C (200°F) oven while you cook the rest.

  5. ServeDust with powdered sugar and top with berries and maple syrup.

💡 Tips for success

  • Fresh brioche is too soft — leave slices out for a few hours to dry slightly.
  • Medium-low heat lets the custard cook through before the outside burns.
  • Challah or thick white bread make good substitutes.

🧊 Storage & leftovers

Freeze cooled slices in a single layer, then bag. Reheat from frozen in a toaster or oven.
